Well, it has been a while since I posted a new recipe. This one is a staple in my family, both my son and fiance love it(I get requests all the time for it). To me eggs are one the best foods to eat, they are both healthy and versatile, you can make eggs in any style you want and eat them at any time, whether is breakfast, lunch or dinner. For the potatoes,  the key ingredient is the smoked Paprika, it gives it such a smokey flavor to them, and combined with the onions and the garlic it adds even more depth to the dish.  Enjoy this fantastic yet easy to make dish.  HAPPY COOKIN’!

  1. 6-8 Eggs (any style) I chose scrambled.
  2. 3 Cloves of garlic crushed and minced
  3. 1 Small onion finely chopped
  4. 1 Tsp of black pepper
  5. Salt to taste
  6. 1 and 1/2 tsp of smoked Paprika
  7. 1 Tsp of Herbs De Provence
  8. 10 Red potatoes, again any kind will do. (peeled or skins on are OK).

Peel the potatoes and dice them to about a  roughly 1 inch dice, chop onion and garlic and set aside.  In a medium size pan add 2-3 tablespoons of canola oil and heat to a medium temp, add potatoes and cook, stirring occasionally.  Once potatoes start to brown, add the garlic and onions and cook for another 3-4 minutes, then add the paprika, salt and pepper.  In a small bowl mix together the eggs and salt to taste.  Heat a medium size pan and add 2 tbsp of butter and cook eggs to desire consistency, by now the potatoes should be nice and brown. Grab a plate serve to the family and watch them go “WOW!! that is dee-lishous!!”

***TIP: want a touch of creaminess, add a few slices of avocado to bring this dish to another level!
